TEACHING EXPERTISE AREA
  • HUEC 1110 Introduction to Nutritional Sciences (3 credits): General education life science course designed to address several general education outcomes including an appreciation of the methods of critical inquiry and a comprehension of how knowledge is acquired and applied. A significant portion of this course is devoted to the understanding of the cellular organization of life, the principles of nutrition and their application in promoting health with emphasis on the healthy adult.
  • HUEC 3119 Fundamentals of Quantity Food Production (4 credits): Principles and practical application of quantity food procurement, production, distribution and service, menu development, sanitation and safety, materials and resource management and development.
  • HUEC 4023 Management in Dietetics (3 credits): Management theory and principles of planning, organizing, leading, and controlling; applications to food service systems, clinical dietetics, and community programs.
